The brine was preserved in the shell. I went to Palace Station Oyster Bar yesterday so I decided to get Cioppino instead of Gumbo. It was great TONS of seafood: Crab, Shrimp, Clams, Mussels, Scallops, Squid, and Crab Meat. All seafood was perfectly fresh, not a bad Mussel or Clam in the bowl. Ate up every bit of the Broth too.
